Creamy Zucchini Cheese Spread

This creamy zucchini cheese spread recipe makes for a hearty dip for pitas, spread on sandwiches, on artisan bread for an easy app, or for veggies! Toss over warm pasta and add grilled chicken for an easy meal.

Recipe

Ingredients
1 C – spiraled or grated green zucchini
1 T – Stacey Hawkins Simply Brilliant Seasoning
1 tsp – Stacey Hawkins Roasted Garlic Oil
1/4 C – ricotta cheese
1/4 C – light cream cheese
Instructions

Grate or spiralize the zucchini.  Give it a good squeeze in your hands to remove the excess moisture. Combine all the ingredients in a medium bowl and toss together.
Season with a pinch of salt and pepper (or Dash of Desperation!  YUM!) to taste.
Serve chilled. Can be stored in a airtight container in the fridge for up to 1 week.

    Please clarify what we are doing with the zucchini in this recipe. I’m assuming we use it raw and possibly “grated”.
    I’d love to make this for a cocktail party I’m attending! Thanks for your guidance. Jo Ann

    Oh my- JoAnn it looks like part of the recipe got cut off. THANK YOU for bringing this to my attention. Going to call the tech team and fix it now. You basically spiralize the zucchini and use it raw. You could grate it as well. Either way, give it a good squeeze when you are done to get out the excess moisture. Have fun at the party & be sure to post a photo of your results!
