I love to develop recipes that are low carb, easy, delicious and give you your "food life" back. This little recipe checks all the boxes - AND puts sandwiches back on your plate again! (You're welcome.)
Sometimes you just crave a sandwich or need to eat on the go- and you're tired of rolling up meat or stuffing lettuce leaves with protein, right?
This ridiculously simple recipe makes a bun-like roll that's Lean and Green, low carb and good for you. If you're on Optavia, 2 slices is equivalent to just ONE condiment! Really!

Preheat oven to 300° F.
- Separate egg yolks and whites into two large bowls.
Into the bowl with the whites, add the cream of tartar. Using an electric mixer, beat on high until very stiff peaks form. Set aside.
Add remaining ingredients into the bowl with the yolks. Using an electric mixer, beat together on high until all ingredients are incorporated. (will be a little bit lumpy)
- Pour the egg yolks over the whites and then GENTLY fold them together until completely combined.
Line 2 cookie sheets with silicone baking mats OR GENEROUSLY spray with nonstick cooking spray. Using a large spoon, place a dollop of egg mixture onto the mat and spread to size. DO NOT make these too thin as they will burn and crisp. Keep egg mixture about 1/3″ thick for best results. Repeat process to make 12 “rolls.”
Bake for 30 minutes and remove from oven. Remove from the pan while still slightly warm and set aside to cool. Bread will be crispy in texture when it comes right out of the oven.
- Once cooled, place in a zipper style bag and overnight it will turn to soft, pliable bread that is delicious! You can lightly toast them at the time of use if you want to make them crisp again.
