14 Mar Perfect Roasted Brussels Sprouts
Oh, poor Brussels sprouts! This antioxidant-rich little vegetable has been made a bad guy in the veggie world for far too many years, and with just cause. Old style preparations of boiling them to death and slathering with salt and butter leave nothing but mushy, unappetizing and bitter little green balls that are better in a compost pile than on a plate. When prepared differently, however, all of that changes. Perfect Roasted Brussels Sprouts are sweet, nutty, and so deliciously full of flavor you’ll want to eat again and again. How do you do it? Easily! Read on:
1 lb fresh brussels sprouts, rinsed, ends trimmed off and sprouts cut in 1/2 (1/4 for the big ones)
1 T Stacey Hawkins Skinny Scampi Seasoning (or many others- see below for variations)
Preheat oven to 325 degrees.
Rinse sprouts and then trim/cut (DO not rinse them after they are cut- they will fall apart and take on too much water.)
Place sprouts in an oven safe dish, drizzle with oil and seasoning. Toss to coat.
Roast in oven for 15 minutes. Turn sprouts over to roast evenly. Roast an additional 10-15 minutes until slightly browned.
