27 Mar Zesty Chicken with Artichokes and Garlic a Lean and Green Recipe
This one dish wonder is so full of flavor, you might actually FORGET it’s good old boring chicken breast. With just a few ingredients, you’ll take it from bland to wow in less than 20 minutes and have a meal on your hands your whole family will love.
1½ lb boneless chicken breasts, cut into 1” cubes
1 12-15oz jar artichoke hearts IN WATER NOT OIL, drained well & chopped**
1/4 C green onions (scallions) tops only for garnish
DIRECTIONS: In a large skillet, heat Roasted Garlic Oil in a pan over medium-high heat. Add chicken and cook for 5-7 minutes on each side, until chicken is browned and firm. Add artichokes and seasonings. Turn heat to medium and simmer for an additional 5 minutes, until artichokes are thoroughly heated and chicken is fully cooked.
