One dish dinners rock in my book! Especially when they're flavorful, easy and work with the Optavia Diet, Optavia 5 &1 diet and are a low carb recipe to boot!
This quick and easy dinner features chicken and green beans, with a spicy (but not too spicy) and ooey... gooey, cheesy twist.
Just add to the dish and bake and you've got a complete Lean and Green meal that everyone will love!

Ingredients

1 pound fresh, French style green beans (the small, thin ones)* ends trimmed

â…“ C low sodium chicken broth

2 pounds boneless, skinless chicken breasts, thinly sliced (can use tenderloins too)

1 Tablespoon Stacey Hawkins Lit Garlic Seasoning, divided

1 C (16 Tablespoons) low-fat shredded mozzarella cheese
Directions
Preheat oven to 375° F.
Place green beans in a single layer in the bottom of a 9x12 baking dish and pour the broth over the beans.
Layer the chicken over the green beans and sprinkle with ½ of the Lit Garlic Seasoning.
Sprinkle the cheese over the chicken and then with the remaining Lit Garlic Seasoning.
Cover with foil and poke 4 holes in the top of the foil to let the steam vent.
Bake for 35-40 minutes until chicken is thoroughly cooked and beans are crisp tender. Serve hot.

*Stacey's Chef Notes:
If you cannot find the thin French style green beans, you can use the regular ones, however, it's suggested that you rinse them, put them in a covered bowl and microwave on medium high for 1 minute to accelerate the cooking. If you put them in the dish raw and then bake them, they will need additional time to cook and soften and the chicken will overcook.
