This is one of my all-time favorite recipes because it is so easy, you just throw it all in the slow cooker and walk away.
The results are hearty, tangy and everyone seems to just love it. Perfect for a night when you won't be able to cook, or even better for a night when you just want the night off!

Ingredients

4 chicken breasts (about 1 1/2 lbs. total) bone in and skin removed

2 C fresh broccoli florets

1 T Stacey Hawkins Garlic Gusto Seasoning (or fresh garlic, onion, parsley, lemon and paprika)

1 teaspoon Stacey Hawkins Mediterranean Seasoning (or fresh basil, marjoram, mint, oregano, borage and black pepper)

1 C roasted red pepper strips (about 1- 12 oz jar) liquid included

4 T sun dried tomatoes, chopped (the dry ones that look like dehydrated fruit, NOT the ones packed in oil)

2T Stacey Hawkins Balsamic Mosto Cotto (or Balsamic Reduction- NOT vinegar)

1 13 oz can chopped artichoke hearts, drained well (optional- add only if not on 5&1 program or have transitioned as artichokes are low in calories and carbs, but not an "approved" vegetable)

2 T capers
Directions
Place chicken breasts in the slow cooker, bone side down.
In a small bowl, combine remaining ingredients and then pour over the chicken.
Place the lid on the slow cooker and cook on low heat for 6-8 hours until chicken is fork tender & cooked thoroughly.
Season with Salt & Pepper or for more flavor a pinch of Dash of Desperation Seasoning and serve warm.
