There is a love and hate relationship many of us have with Valentine's Day. We love love, but sometimes the hype can be a lot- especially when it comes to a "romantic" night out!
It's not only tough to find recipes that actually work with low carb programs, but, often on holidays food is overpriced, over rated and leaves us wanting for more.
I want to make that different for you this year with a home-made, elegant and ridiculously delicious recipe that will not only blow you away, but leave you so satisfied it will be a dish you'll LOVE to make ANY night!
This recipe for low carb Asparagus and Crab Oscar is filling, on program and so super easy to make. Whether you use real crab meat (I suggest the splurge as it's STILL less than you'll spend for a night out) or use imitation crab meat (can also substitute shrimp if you'd like) I guarantee that this recipe will be a winner.

Ingredients

1 medium size spaghetti squash

6 ounces trimmed asparagus spears

14 ounces crab meat, imitation crab or precooked shrimp (shelled & deveined)

2 teaspoons Stacey Hawkins Luscious Lemon Oil

1 teaspoon Stacey Hawkins Garlic Gusto Seasoning

3 Tablespoons light mayonnaise
-
1 Tablespoon Stacey Hawkins Lemon Pepper Panko
-
1 Tablespoon lowfat grated parmesan cheese
-
1/4 teaspoon dijon style mustard

Directions
Prick the spaghetti squash with a fork, place on a plate and cook whole in the microwave for about 8 minutes on high. When finished, remove and set aside to slightly cool.
Trim the asparagus and place on a microwave safe plate. Set aside.
Add the crab meat (drained if using canned) or equivalent to a medium sized bowl and season with Dash of Desperation. Gently toss to mix.
Make the topping by combining the mayo, parmesan, mustard and panko together in a small bowl. Set aside.
Cut the spaghetti squash in half top to bottom (not lengthwise). Using a fork, gently twirl the inside of the squash to release the strands. Place the strands in a bowl and season with Garlic Gusto Seasoning & a pinch of Dash of Desperation. Toss to coat. Keep warm and set aside.
Preheat the broiler to high heat.
Put the asparagus in the microwave on high for 1 minute only,
Remove, toss with Luscious Lemon Oil and place equal amounts of spears side-by-side, making a little "raft" on each plate.
Divide crab mixture in half and place equal portions on top of each asparagus raft.
Place equal sized dollops of mayo mixture on top of the crab. You can use the back of the spoon to gently smear.
Place the plates under the broiler (approx 6" below) and broil until mayo mixture is slightly brown and bubbly (approx 2 minutes).
Carefully remove plates from the broiler (they will be hot!) and add 5 ounces of cooked squash to the plate.
