Ingredients

1 ¾ pounds raw shrimp- shells removed & deveined

4 tsp butter

1 - 2 T Stacey Hawkins Kickin’ Cajun Seasoning

⅓ c chicken stock

4 T low-fat cream cheese
-
1 lime, cut into wedges
-
parsley for garnish if desired
Directions
Heat a large skillet to medium heat. Melt 1 tablespoon of butter, add shelled shrimp to the skillet and sprinkle the Cajun spices over the shrimp. Stir well so it is evenly coated.
Cook the shrimp 3-4 minutes and when it is pink and tender add the remaining butter, cream cheese and stock to the skillet and reduce the heat a little bit. Keep stirring until the cream cheese melts & comes together to form a delicious sauce.
Serve over cauliflower rice, noodles or straight up with your favorite sides!
