Even something as basic as cucumbers can be transformed into a Wow! side dish with very little effort. Enjoy this crispy, crunchy cucumber salad with a bright pop of cool and creamy cilantro dressing, just a hint of crunch from pine nuts and the sweetness of red bell pepper.
This easy and delicious side dish is a perfect accompaniment to grilled chicken, fish or beef. Is a terrific base for crumbled taco meat, beans (if allowed) or even chicken.

Ingredients

2 C cucumber spears

1 C red bell pepper slices

40 pine nuts

2 C fresh cilantro leaves, divided

1 C nonfat yogurt

1 T apple cider vinegar

1/4 C (approximately) unsweetened coconut milk

1/2 Tablespoon Stacey Hawkins Southwestern Seasoning
Directions
Wash and cut cucumbers and peppers. Place in a bowl, toss together and set aside.
Toast the pine nuts in a small pan over medium high heat, or toast quickly on a sheet pan using a blowtorch. Set aside to cool.
Set aside 3 T cilantro leaves for garnish.
Add all other ingredients, except coconut milk to a blender.
Pulse on high until ingredients are mixed well. Slowly add enough coconut milk to thin to desired consistency.
Equally divide the salad on 2 chilled plates. Sprinkle with equal amounts of pine nuts and cilantro. Drizzle with 2 T dressing and fresh cracked pepper to taste.
