Directions
Place 6 cups of water in a pot and put over high heat to bring to a boil.
While water is heating, peel the jicama and cut it into thin slices.
Place the jicama into the boiling water and cook for 10 minutes until it begins to soften.
Place boiled jicama on a large towel and dry thoroughly. This step is SUPER important. Make sure they are as dry as can be.
Add jicama into a large bowl.
Drizzle oil over the jicama and toss to coat.
Sprinkle the Dash of Desperation or Truffle Seasoning over the jicama and toss to coat.
Place the jicama slices in a single layer in the air fryer at 390° F and cook for 15-20 minutes, flipping 1/2 way through the cooking so they get nice and brown.
Place on a plate and keep warm in a 180 degree oven while cooking the batches.
Repeat the process until all fries are done.
Sprinkle with Parmesan cheese and serve hot. Enjoy!

Boiling the jicama before air frying ensures even cooking – don’t skip this step!
Drain and dry the jicama after boiling to remove any excess water so the oil will stick and they’ll get nice and crispy.
Make sure to shake or flip these low-carb fries halfway through the cooking time. This allows the fries to get crispy all over.
To keep the texture of these fries crispy, you can also bake them in the oven on a parchment paper prepared baking sheet.
Cooking times will vary depending on appliances used.
