Who says salad has to be boring?
Even when it is a lean and green, Optavia 5 & 1 low carb recipe! With this decadent, but oh-so-easy combination of flavors, you’ll never look at greens the same way again.
The tangy, heart-healthy pomegranate is simply sprinkled over the top of the salad and then everything is gently tossed in a ridiculously luscious orange balsamic vinaigrette (again, so easy to make!)
You may think WOAH- Pomegranates? Aren't they fruit and isn't fruit forbidden on program?
Yes- "technically" high carbohydrate ANYTHING is frowned upon because it throws off the entire chemistry of your diet.
What you need to remember is this: Pomegranates are actually quite low in carbs! 1 Tablespoon of pomegranate seeds is 3 grams of carbs and only 9 calories!
Since you are entitled to have (3) condiments a day that are under 5 grams of carbs each, these qualify. So as you see, they well work within the technical confines of the program. Just be sure to measure and don't overdo it.
The flavors on this salad are simply incredible. I promise you're going to love it SO much that you'll want to eat it with every meal! Which by the way, you could make it a complete Lean and Green dinner simply by adding some grilled chicken, steak or fish seasoned with a little Dash of Desperation Seasoning and you're ready to go!

4 teaspoons Stacey Hawkins Balsamic Mosto Cotto do not use regular balsamic vinegar as it is too tart

4 teaspoons Stacey Hawkins Valencia Orange Oil

1 teaspoon Dijon mustard (read label- no sugar added)
- 6 C baby greens (here I use mesclun mix)
- 4 Tablespoons pomegranate seeds
Directions
- Place first 4 ingredients in the bottom of a large bowl (big enough to hold the greens) and whisk together to make a smooth vinaigrette.
- Add the greens and using salad tongs, "pull" the dressing up through the salad to coat.
- Divide into 4 smaller bowls, sprinkle each with 1 T of pomegranate seeds and enjoy!
