Umami is defined as the savory, meaty or "earthy" taste of foods. It's most notable in things like beef, seafood, aged cheeses, soy sauce, kimchi and of course, mushrooms.

An important taste (in addition to sweet, sour, salty and bitter) umami brings rich mouth feel, and heartiness to recipes resulting in meals that truly satisfy.
