Zesty White Chili a Lean and Green Recipe

I was introduced to "white chili" on a European mountain long ago and far away while on a skiing trip. The creamy texture was hearty, rich and robust and satisfied my freezing soul after a long day of picking myself up and falling down again. Everywhere we went, I tried different varieties and came home to develop my own recipe (and of course, the spice to go with it!)
With no beans, no potatoes and no tomatoes, you may say- "where's the chili? where's the fun?" I promise you, you won't miss them, not in the least.
The lack of starchy carbs make this a perfect lean and green meal. The lack of work makes it even more so. Try this one today and I promise it will satisfy you as much as it does me (and my kids- this one is a BIG favorite for them!)

Ingredients

28 ounces 98% lean ground turkey or chicken.

1 cup chopped scallions (primarily whites)
- 1/4 C low sodium chicken broth

2 Tablespoons (2 Capfuls) Stacey Hawkins Zesty White Chili Seasoning

1 Cup Sour Cream

½ C low-fat cheddar cheese for garnish
Directions
Add meat and scallions to a medium size non-stick pot with a lid. Sauté over medium high heat until fully cooked, but not browned (about 5-7 minutes). Break up clumps as needed.
Add chicken broth, seasoning and sour cream. Stir to combine and bring to a boil.
Reduce heat to simmer, put the lid on and cook for 5 minutes. Serve hot.

(NOTE- you CAN make this with beans if you would like and your program allows, simply add 1 can of white cannellini beans or other small white beans (drained) before boiling. Nutritional information, however, does NOT include beans.)
