Summer offers a bounty of fresh herbs. Whether grown on a windowsill, in a pot or plucked from the local Farmer’s Market, fresh herbs and farm raised chicken make for a mouthwatering Lean and Green meal that’s as easy as it is delicious.
There are two easy ways to cook this dish. You can put it on an outdoor BBQ or as in this image, we've roasted the chicken in the oven with fresh asparagus (tossed with a little olive oil and Dash of Desperation Seasoning) and done it all in a cast iron skillet for a one pot meal. Whichever way you cook it, this is a recipe you'll come back to again and again.

Ingredients

1 1/2 lbs. boneless, skinless chicken breasts (or thighs)

4 teaspoons Stacey Hawkins Luscious Lemon Oil (or oil, fresh lemon juice and fresh lemon zest)

2-3 T fresh chopped herbs (parsley, thyme, rosemary, chives, tarragon, etc.
Directions
Preheat outdoor grill to medium-high heat (about 350° F)*
Add all ingredients to a large bowl and toss to coat.
Grill for 7-12 minutes on each side until meat is fully cooked (verify with meat thermometer)
Serve hot or chilled.
